    Avocado Egg Salad 🥑🥗

    Prep: 10 minutes
    Makes: 2 Servings

    Ingredients:
    • 1 large Hass Avocado
    • 4 Egglands’ Best Eggs, hard boiled (see note)
    • ¼ cup minced red onion
    • 2 ½ Tablespoons light mayonnaise
    • 1 tablespoon finely ...
    chopped fresh dill
    • 1 tablespoon finely chopped fresh parsley
    • 1 teaspoon Dijon mustard
    • Kosher salt & black pepper, to taste
    Directions:
    1. Cook eggs according to desired doneness. Once cool, peel and chop eggs and add to a bowl.
    2. In a separate bowl combine, avocado, red onion, mayonnaise, dill, parsley, mustard and season with salt and pepper. Mix until fully combined.
    3. Fold eggs into avocado mixture. Enjoy immediately with crusty bread or a green salad.

    NOTE: I cooked mine for 7 minutes for a bright yellow center. For softer center go for 6 minutes.

    Directions:
    Cut a circle in the center of the bread using a glass or cookie cutter.
    Lightly spray both sides of the bread with olive oil or butter spray.
    Place the bread on a parchment-lined air fryer tray or basket (this prevents the egg from leaking through).
    Carefully crack an egg into the hole in the bread.
    Sprinkle with Everything but the Bagel seasoning.
    Air fry at 375°F for 6–7 minutes, depending on how runny or set you like the yolk.
    Remove carefully and enjoy as-is, or top with extras like avocado, cheese, or a drizzle of hot sauce.

    Variations:
    Add a slice of cheese during the last minute of cooking
    Use sourdough or multigrain bread for added texture
