Celebrate Summer Salads

Summer is a great time to enjoy the bounty of produce it brings. Fresh fruits and vegetables provide a nutritious and sweet boost of satisfying energy. Turn your summer salad into a hearty meal with these tips:
- Start with Green Way Organic Salads as your base and add in sweetness such as grilled peaches, cut up watermelon or berries.

Grilled Peach Summer Shrimp Salad
Prep: 20 minutes
Makes: 4 Servings
Ingredients:
- Green Way Organic Salads
- 1-pound Green Way Cooked Shrimp (defrosted if frozen)
- Salt & pepper
- 2 peaches, halved, pit removed
- 2 teaspoons olive oil
- 1 Seedless cucumber, chopped
- 1 Red bell pepper, chopped
- ¼ red onion, finely chopped
- 1 cup blueberries
- Store prepared dressing such as balsamic vinaigrette
Directions:
- Heat a grill pan or outdoor grill over medium-high heat.
- For the peaches: Cut in half and twist (like an avocado)! Remove pit and cut peaches into thirds. Toss with olive oil and grill for 2 to 3 minutes per side.
- Meanwhile, in a large bowl add in salad greens, chopped cucumber, bell pepper, red onion and blueberries.
- Remove shells from shrimp and ensure they are completely thawed before using.
- Remove peaches from grill and allow to cool before adding to salad.
- Toss salad with your favorite dressing and enjoy!
